Gel memory foam is regular memory foam with cooling gel added, either as beads swirled through the foam or a gel layer. The goal is to pull heat away so the bed sleeps cooler, since traditional memory foam tends to trap body heat. Both feel similar and contour the same way; the main difference is that gel aims to reduce heat buildup.
Standard memory foam is dense and hugs your body, which is great for pressure relief but can hold warmth. Gel memory foam adds a heat-absorbing material to help move heat away from the surface, so you feel cooler, at least early in the night. The contouring feel is largely the same as regular memory foam.
Gel can help the surface feel cooler when you first lie down, but its effect over a whole night is debated, because gel can eventually absorb as much heat as it can hold. It is a real feature, not a gimmick, but it is not a guarantee against sleeping hot. For serious heat issues, airflow from coils or an open-cell structure matters more.
